As I am laying vents for a new AC I took pictures of the void behind the ice box. There's about 6-8 inches of sprayed/molded insulation at the back of the ice box.

Yep! Looks familiar. I was shocked when I saw all of that space back there as well. Space that gets heated up when the sun beats down on the hull. Hot space that is right next to the icebox. Amazing.
I filled mine all the way up with spray foam insulation.
If you are running your ductwork through here, you may want to add additional insulation around you duct. I'm guessing that you are putting your compressor unit under the galley sink or in the lazarette?

I'm going to add a 1 inch conduit next to the vent hose then fill it up with sprayed insulation. The conduit will be for AC wiring and for future wiring.

The AC unit will go in the 2nd drawer under the pilot berth with the duct work hoses to the the left of the unit. I'm raising the pilot berth cushion floor 2 inches for the unit. The only thing needed to do this is a spacer under the cushion board and new trim around that. I'll still be able to use the right most (and largest) drawer under the pilot berth. Through hull will go opposite the engine through hull; strainer under the sink. Water outlet will go under the pilot berth just above the water line. Exhaust vents going in v-berth, salon, galley and the back side of the captain's berth. A friend told me about a damper/vent he uses that works pretty good; I ordered several. He dampers off areas of the boat when not in use; this way you can run more vents than the specs call for.

So, the a/c duct going behind your stove will exit where? The face of the sink cabinet?
It is interesting that you have drawers under the pilot berth. Mine is just a simple storage locker. Did you build the drawers, or was it a previous owner?

I just ran 90mm ducting through the space behind the reefer/stove for a forced air furnace (AC? Brrr... different priorities when your cruising ground is all above 45 north!).

Anyway, it was a tight fit to route a 90mm duct through the pinch point into the space below the pilot berth, especially since there was already refrigeration lines, propane lines and electrical going through the same space, and I insulated the duct with half-inch foam. Photos here:

The duct routing behind the stove towards the sink will go through the galley/engine wall and back in again through one of the small shelves just behind and above the sink. I'll T off that same line and run it to behind the captain's berth with dampers on both vents.

My boat has had two previous owners; not sure who added the drawers under the pilot berth.
