Thanks for the pics, it says it all... Big project indeed. I understand why so many people go with the option to add insulation inside the icebox even if it's reducing the usable volume. That's the way I'll do this probably.
Where coud I find the insulation material for doing this ?

In Eric?s case, I believe he had a new refrigerator fabricated rather than just adding additional insulation.

JD,
if you want to save some money, go with the rigid, blue(and/or pink)insulation board from Home Depot or Lowes. Don't use the foil faced for it will soak up water much quicker. Home Depot also has sheets of FRP (used for bathtub walls)that you could use to finish off the inside. You'll want to use epoxy fillets in the adjoining corners to seal the joints etc.
If you want higher efficiency, go with custom fabricated vacuum panels. The downside to these is the cost and if the seal if compromised, you lost all insulative value.
