What is the easiest way to remove the Companionway hatch? Mine has some old vinyl on it that is peeling off making it hard to slide as it hits the bottom. Do I need to remove the two wooden slats on top running parallel to the slide or the vertical slats at the end? Or am I missing something. Thanks.

Yes, just remove the two slats on the outside. Then you can lift out the hatch when it is fully closed. We removed the original liner and used automotive headliner spray glue to attach new liner material to the hatch. I also used the opportunity to spread some thickened epoxy along the outboard slide edges to raise the hatch just a little. Those edges were nearly paper thin before I put the epoxy on.

I removed mine , pulled of the nasty vinyl, scrubbed off the glue, and painted it white, looks much better.

It looks like I have to remove the bungs to remove the slats, it doesn't look like mine is through bolted.

If you carefully drill the bungs with a Forstner bit, you can remove the screws (you are correct they are not through bolted but simply self tapping phillips head screws) and the slats easily. You can then put some teak plugs in when you replace the cover. Use oval head screws and leave a bit of gap underneath when you glue the new plugs in and you can probably just hit the plugs with a screw driver if you ever have to remove it again.
I put some thickened epoxy in the edges of the hatch as well because the it was wearing a lot, but I also put a strip of selvage edge expoxy tape on the hatch and then put wax paper down to make a new edge on the hatch where it articulates with the house. Trimmed it up and now the hatch slides very smoothly. Should be good for another 25 years.
